Meet Our Head Chef – Jose Thony Francois
Head chef with 30 years of experience and strong culinary skill from different types of Cuisine.
Thony Migrated to Australia in 2004 and worked as sous chef at Crown Casino in the Banquet Kitchen for 5 years. Cooking for major events such as the Logies, Brownlow Gala Dinner and many other events.
In 2008 Thony joined the Mantra Hotel Group as Sous chef and made his way up to Executive chef.
“The highlight of my Career was in 1992 – 1998. I was appointed as Head-Chef for the Crown Prince of Bahrain. This gave me the opportunity to showcase my culinary skills for the Royal Family. Managing a kitchen brigade of 30 chefs, providing a 24 hour catering services for Breakfasts, lunches, dinner banquets, as well as outside catering for the royal family and guests.
During this time I had the opportunity to showcase my cooking for Princes, Princesses, Ministers, Presidents and many other guests such as Prince Charles and Tiger Woods.”
Today appointed as Head Chef at Aria at Windmill Gardens. Thony’s Philosophy is to source and use fresh produce available and to showcase dishes with a clean contemporary twist, which often highlight his Classical French Training and Background.
